Zucchini Bread Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • Pinch of salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons packed brown sugar
  • 1/2 cup shredded zucchini
  • 2 tablespoons cream cheese, at room temperature
  • 1/2 teaspoon vanilla extract
  • Toppings
  • Any additional toppings desired, such as granola, toasted nuts, and additional shredded or sliced zucchini.

Directions

  1. Combine all ingredients in a medium bowl and whisk together. Transfer to a jar with a lid and refrigerate for at least 6 hours or overnight.
  2. Serve oats in a small bowl with sliced zucchini and any additional toppings.
