Basic Potato Salad

Serves 6 people

Ingredients

  • 3 lbs. small waxy potatoes such as red or gold
  • salt
  • up to 2 cups: sliced green onion, diced bell pepper, sliced celery, diced sweet onion, corn kernels, green peas and/or quartered cherry tomatoes
  • Up to 1/4 cup diced pickles, capers or sliced olives
  • 4 hard-cooked eggs, peeled and chopped, optional
  • 1/2 to 3/4 cup desired dressing

Directions

  1. Place potatoes and about 1 Tbsp. salt in a large pot and add cold water to cover by 1 inch. Bring to a boil over high heat and then reduce heat to a simmer. Simmer potatoes until just tender, about 20 minutes.

  2. Drain and set aside until cool enough to handle.

  3. When potatoes are cool, peel (if desired) and cut into 3/4 inch chunks.

  4. Place potatoes in a large bowl and add vegetables, pickles and eggs, if using, and gently toss to mix. Add desired dressing and gently toss to coat. Serve immediately or chill until ready to serve.

  5. I use a mixture of Miracle Whip and mustard, but you can make your own dressing.
