Baba Ganoush

Prep time: 5 minutes
Cook time: 15 minutes
Serves 2 people

Ingredients

  • 1 Aubergine
  • 1 Garlic clove
  • 2 TBSP Tahini
  • Lemon Juice
  • Fresh herbs

Directions

  1. Since aubergine into 1/4 inch rounds, sprinkle with sugar and allow to sit to draw out some of the moisture

  2. Dry off and grill with some olive oil, salt and pepper until cooked well, with some charring for flavour

  3. Allow to cool and then peel – some skin is OK but try and get rid of most

  4. Blitz on food processor with garlic, tahini, lemon juice and herbs
