Basic Uncooked Butter Frosting

Ingredients

  • 1/3 cup soft butter
  • 3 cups sifted confectioners' sugar
  • dash salt
  • 1/4 cup milk or coffee cream
  • 1 1/2 tsp. vanilla

Directions

  1. Put butter in small mixer- bowl. Cream a few seconds on medium speed. Stop mixer, add sugar, salt, milk and vanilla. Beat on low speed until blended.

  2. Scraping bowl, then on high speed until fluffy, about 2 minutes. Add a little more sugar, if needed to achieve desired consistency. Fills and frosts 2- 8 or 9 inch layers, 9 × 9 x2 cake.

  3. Lemon or Orange Frosting: Use lemon or orange juice instead of milk, add 1 tsp. grated rind.

  4. Maple Frosting: Use maple syrup instead of milk. Omit vanilla. Decorate with walnut halves.

  5. Strawberry Frosting: In basic recipe, use 1 lb. confectioners’ sugar, sift 1/2 cup cocoa with it. Use 1/3 cup strong hot coffee instead of milk.

  6. Chocolate Frosting: Make basic recipe, using 1/2 cup butter, about 1 lb. confectioners’ sugar, add 3 squares melted, unsweetened chocolate or 1/2 cup cocoa, 2 egg yolks. Beat well.
