Basil Garlic Parmesan Butter

Ingredients

  • 4 to 6 cloves garlic, minced (or less to taste)
  • 3/4 cup freshly chopped basil
  • 3 to 4 Tbsp. lightly toasted pine nuts, or more
  • 1 Tbsp. white wine
  • 2 Tbsp. freshly grated Parmesan cheese
  • Salt to taste
  • Crushed dried red chili to taste
  • 2 sticks unsalted butter, softened

Directions

  1. Combine all ingredients. Freeze in ice cube trays or in decorative molds. To freeze pats, place small amounts of butter on a sheet of wax paper on a cookie sheet. Place in freezer until pats have hardened, then place frozen pats in plastic bags or container and return to the freezer/

  2. makes about 3 cups.

  3. Note: Good to use with corn, green beans, squash, rice and pasta dishes or on sliced bread.
