Basil Oil Marinade

Ingredients

  • 1/2 cup basil-flavored oil
  • 1 Tbsp. minced garlic
  • 1 small yellow onion, coarsely chopped
  • 2 Tbsp. chopped fresh tarragon (or 2 tsp. dried tarragon)
  • 1/4 cup dry white wine
  • 1 tsp. salt
  • 1 tsp. freshly ground pepper

Directions

  1. Put marinade ingredients in a food processor and process 20 seconds. Pour over poultry or fish in a nonaluminum dish. Marinate thin fillets for 15 minutes; chicken or other poultry pieces for 3 hours. Remove from marinade and grill or bake as desired.
