Raspberry/Blackberry Squares

Ingredients

  • 1/2 C butter-do not use buttery crisco
  • 3/4 C sugar
  • 3 eggs
  • 1/2 t salt
  • 1 1/2 C flour
  • 1 t baking powder
  • Raspberry or blackberry jam-used 11.5 oz "Just Fruit" blackberry Kroger brand PLUS 4 T Smuckers Natural Red Raspberry fruit spread
  • 3/4 C brown sugar
  • 1/2 C chopped nuts-walnuts are good-chop finely

Directions

  1. Cream butter and white sugar in bowl. Beat 1 egg with additional 1 egg yolk

  2. Stir into creamed mixture

  3. Stir in salt, flour and baking powder.

  4. Spread on 9X13 baking pan

  5. TRY cooking this for about 20-25 minutes then topping with jam and meringue (10/17)

  6. Spread layer of jam over flour mixture

  7. Beat remaining egg whites only until stiff

  8. Add brown sugar

  9. Fold in nuts

  10. Spread over jam

  11. Bake 350 degrees for 8-10 minutes

  12. Cut into squares (Might want to cut with sharp knife dipped into hot water to reduce cracking of the meringue topping)
