  • 2 lbs potatoes, cut into bite-sized wedges
  • 2 cups chopped onions
  • 4 cloves garlic, pressed or minced
  • 2 tsp olive oil
  • 2 tsp chili powder
  • 1 cup undrained canned whole or diced tomatoes
  • 2 tbs chooped parsley
  • salt and pepper to taste
