Basil, Roasted Cauliflower and Leeks

Ingredients

  • 1/2 head cauliflower, cut into florets
  • 2 leeks, cut into chunks
  • 1/2 red onion, cut into chunks
  • 1 tsp. sugar
  • 3 Tbsp. balsamic vinegar
  • 1 Tbsp. olive oil
  • 1/4 cup chopped fresh basil
  • salt and freshly ground pepper to taste

Directions

  1. Place all vegetables into a clay roaster or glass baking dish.

  2. Whisk together remaining ingredients in a small bowl; pour over vegetables. Toss to coat.

  3. Bake tightly covered at 250 degrees 30 to 40 minutes, or until vegetables are tender, stirring and basting once after 15 to 20 minutes.
