Basil and Roasted Red Pepper Topping or Dip

Ingredients

  • 1 cup low-fat plain yogurt, low-fat cottage cheese OR sour cream
  • 1/3 cup chopped roasted, peeled red peppers
  • 1/4 cup chopped fresh basil
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper

Directions

  1. combine the yogurt, cottage cheese or sour cream with toe peppers, basil, salt and pepper.

  2. makes 1 1/3 cups

  3. Spread on crostini, crackers or soft bread, or dip with corn chips.
