Torta Fredda al Caffe

  • 1 box of chocolate cake mix
  • For Syrup:
  • 3 tablespoons rum
  • 6 tablespoons water
  • For Filling:
  • 250 ml heavy cream
  • 20 grams icing sugar
  • 110 grams condensed milk
  • 1 egg yolk
  • 50 grams prepared instant coffee
  • 50 grams dark chocolate, melted


  1. Make a chocolate cake from a box.

  2. Prepare the syrup by mixing the water and rum together. Place sponge cake base on a parchment paper lined baking sheet.

  3. Wet sponge with rum and water mixture.

  4. Allow to sit in fridge for 10 or 15 minutes.

  5. Put icing sugar and whipping cream in a bowl.

  6. Whisk it until the mixture reaches soft peaks.

  7. Add condensed milk and egg yolk.

  8. Mix until well combined.

  9. Add coffee.

  10. Mix well again.

  11. Bring 1" of water to a simmer in a pot.

  12. Set a heatproof bowl in the mouth of the pot.

  13. Add chocolate.

  14. Stir until well melted.

  15. While still warm at to filling mixture.

  16. Blend only once until you get a nice mixture.

  17. Pour filling over sponge.

  18. Allow to chill in fridge for at least 6 hours.
