Chicken Parmesan

Ingredients

  • Chicken breasts-may need to slice long way so is thin enough
  • Salt/pepper-to season raw chicken
  • Flour seasoned with salt and pepper in 1 dish
  • Egg wash in 2nd dish (2 eggs with 2 T water)
  • Italian bread crumbs in third dish
  • Combination of olive oil and canola oil
  • Mozzarella cheese
  • Parmesan cheese- finely grated

Directions

  1. Prepare flour dish egg wash and Italian bread crumbs

  2. Dip chicken in flour and tap to eliminate extra flour

  3. Dip in egg wash

  4. Dip in bread crumbs

  5. Put in oil and brown on both sides-don’t need to cook meat all the way through

  6. Place browned chicken on paper towels-to drain

  7. Then place chicken in pan lined with foil

  8. Bake 300 degrees for about 1 hour-depending on size of chicken pieces

  9. Remove and top with mozzarella and parmesan and return to oven to melt cheese
