Stuffed oversized Patty Pan squash

Serves 2 people

Ingredients

  • ! - super large patty pan squash
  • 1 cup ground sausage - I used smoke links, grilled then put into Magic Bullet
  • 1/3 cup break crumbs - Panko Style ( I accidentally used Italian style and tasted good)
  • 1/3 cup fresh grated parm cheese
  • 1/2 TBSP lemon juice
  • 2 TBSP EVOO

Directions

  1. Preheat oven to 400

  2. Prepare the sausage for the filling.

  3. Slice the patty pan in half, so it looks like two halves of a flying saucer

  4. Remove all the seed from the middle of the squash and place the squash on a baking sheet.

  5. In a small bowl, combine the cooked sausage, bread crumbs, cheese, lemon juice.

  6. In the hole where the seeds were in the squash, fill with the sausage mixture then drizzle with olive oil.

  7. Bake in a preheated oven for 50 minutes.
