Beef Tomato & Rice Hotdish

So Basic. Can season with taco, pizza, or italian(spaghetti) seasoning.

Cook time: 20 minutes
Serves 6 people

Ingredients

  • 1 lb Organic Ground Beef
  • 6-8 cups Cooked Rice we like (brown or basmati)
  • 3- 4 cansTomato Sauce or Marinara or Tomato Soup(whatever you have that's tomato based)
  • 2-3 cups frozen corn(or broccoli)
  • Optional to add in 1 can of black beans
  • Season with ANYthing(Taco/Pizza or Italian) - nice to have a different spin on it, we always add sea salt, pepper, thyme, and something smoky or spicy(cayenne, chipotle, or smoked paparika)
  • Ratios are to taste

Directions

  1. Cook Rice(in water or coconut milk or broth), Brown Beef, Defrost/heat veggie choice

  2. Mix all seasoning & ingredients in large skillet or bowl. Freeze or serve.

  3. Add more or less rice the further you want it to stretch

  4. Serve with salad or bread

  5. I usually double or triple this recipe
