Basmati Rice with mustard Seeds and Golden Raisins

Ingredients

  • 2 2/3 cups water
  • 1 1/8 cups Texmati rice (American basmati) or brown basmati rice
  • 1/4 cup golden raisins
  • 1 cinnamon stick
  • 1 tsp. mustard seeds
  • 3/4 tsp. salt
  • 1/2 cup thinly sliced scallion greens

Directions

  1. In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil.

  2. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion.
