Broccoli Rabe with Lemon Ricotta

Ingredients

  • 2 tbsp. olive oil
  • 1 garlic clove, smashed
  • 3 cups trimmed broccoli rabe
  • Salt
  • 1/2 cup ricotta
  • 1/2 lemon, zested
  • 1/4 tsp kosher salt
  • 2 slices Italian bread

Directions

  1. Heat olive oil and garlic in a large skillet over high heat. Add broccoli rabe, season with salt and cook, stirring, until charred and tender, about 4 minutes. Let cool, then chop.

  2. Mix ricotta with lemon zest and kosher salt; spread on 1 slice of bread. Top with the broccoli rabe and the other slice of bread.
