Tomato and Mozzarella with Pesto

Ingredients

  • 1/3 cup cherry tomatoes, quartered
  • 1/3 mini mozzarella balls
  • 1/4 cup chopped roasted red pepper
  • 2 tsp minced shallot
  • 2 tbsp. olive oil
  • 1 tbsp. red wine vinegar
  • 1 tbsp. chopped basil
  • Soft sub roll
  • Pesto

Directions

  1. Toss tomatoes, mozzarella, roasted red pepper, shallot, olive oil and vinegar; set aside 15 minutes. Add chopped basil. Cut one-third off the top of a soft sub roll and pull out some of the inside, leaving a 1/2-inch border around the edges; spread pesto inside. Fill with the tomato mixture and replace the roll top.
