Grilled Meatball Subs

Ingredients

  • 1 lb. ground beef
  • 8 oz. sweet Italian sausage, casings removed
  • 1 garlic clove, finely grated
  • 1 large egg, lightly beaten
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • Kosher salt and black pepper
  • 2 bell peppers, sliced into rings
  • 1 bunch scallions, trimmed
  • 1 tbsp. olive oil, plus more for the grill
  • 4 hoagie rolls, split
  • 1/2 cup ricotta cheese

Directions

  1. Preheat a grill to medium. Combine the beef, sausage, garlic, egg, breadcrumbs, parmesan, 3/4 tsp salt and a few grinds of pepper in a large bowl; mix with your hands. Form into 12 1 1/2-inch meatballs.

  2. Toss the bell peppers and scallions with the olive oil in another large bowl; season with 1/4 tsp salt and a few grinds of pepper. Oil the grill grates and arrange the meatballs, peppers and scallions on the grill. Cover and grill the veggies, turning once, until lightly charred and tender, 2-3 minutes for the scallions, 5-7 minutes for the peppers. Grill the meatballs, turning occasionally, until browned and cooked through, 10-12 minutes. Toast the rolls cut-side down on the grill.

  3. Cut the scallions into pieces. Spread 2 tbsp. ricotta on the bottom half of each roll. Top with the meatballs, scallions and peppers.
