Balsamic Mushroom Pilaf

Ingredients

  • 1 pkg. (.35 oz.) dried porcini mushrooms
  • 2/3 cup boiling water
  • 1 Tbswp. olive oil
  • 2 Tbsp. butter
  • 1 large skallot, finely chopped
  • 1 large clove garlic, minced
  • 4 to 6 fresh mushrooms, sliced
  • 1 cup basmati rice
  • 1/2 tsp. salt
  • Freshly ground pepper to taste
  • 1/2 tsp. dried thyme
  • 2 Tbsp. flat leaf parsley, chopped
  • 1/2 cup dry white wine
  • Approximately 1 cup of stock

Directions

  1. Chop the porcini and cover with the boiling water. Steep for 20 to 30 minutes.

  2. Heat the olive oil in a heavy pot. Add the butter and melt. Cook the shallot, garlic, and sliced fresh mushrooms over low heat for approximately 3 minutes.

  3. Add the rice and cook for another 2 minutes. Add the sdaltr, pepper, thyme, parsley, and wine. Stir and then add the porcini mushrooms, soaking liquid, and stock. Bring to a oil over medium heat. Cover, reduce heat, and simmer for 20 minutes.
