Basque Bread Soup

Serves 4 people

Ingredients

  • 2 large cloves garlic, lightly crushed
  • 1/4 cup olive oil
  • 4 cups water
  • 2/3 cup fine stale bread crumbs, toasted
  • 1 tsp. salt
  • 2 eggs, slightly beaten
  • Salt and pepper to taste

Directions

  1. In a small heavy skillet, saute garlic in oil over moderately high heat until golden brown. Remove and discard garlic; keep oil warm.

  2. In a saucepan, bring water to a boil and stir in the toasted bread crumbs, oil, and salt. Remove the pan from the heat; whisk in the eggs. Season with salt and pepper. Ladle into heated bowls.
