Baked Grouper

Ingredients

  • 2 Tbsp. olive oil
  • 2 small onions, cut into 6 wedges
  • 1 green bell pepper, cut into strips
  • 3/4 cup fresh or canned crushed tomatoes
  • Coarse salt and pepper to taste
  • 1 1/2 lbs. skinless grouper filet, cut into 3-inch pieces
  • 1 tsp. lemon pepper
  • 2 to 3 pinches ground red pepper (cayenne)

Directions

  1. Heat oven to 350 degrees.

  2. Heat oil in a large skillet on medium. Add onions and bell pepper; cook, stirring, 10 minutes or until softened. Stir in crushed tomatoes and tomato paste, cover, reduce heat to low and simmer 10 minutes, stirring often or until onions are very soft, (if mixture becomes too thick, thin with some water.) Season with salt and pepper to taste.

  3. Put filets in a 9 × 13 inch baking dish, folding the thin ends under to even thickness. Season with lemon pepper, cayenne pepper and salt to taste. Ass tomato sauce and bake 20 to 25 minutes, or until fish is opaque throughout. Serve.
