Persimmon Cookies

Ingredients

  • 1 cup persimmon pulp
  • 2 eggs
  • 1 1/2 cups oil
  • 4 1/2 cups flour
  • 1 1/4 cups sugar
  • 1/2 tsp. salt
  • 1 cup pecans (or other nuts)
  • 1/2 cup raisins
  • 2 Tbsp. vanilla
  • 1 Tbsp. butter flavor
  • 1/2 tsp. cinnamon, allspice or ground cloves

Directions

  1. collect ripe fruits and remove skin and large seeds. Puree fruit.

  2. Mix all ingredients and spoon two tablespoons at a time onto baking sheets.

  3. Bake about 12 minutes at 350 degrees.
