Cheesy Bacon Potato Salad

Ingredients

  • Salad
  • 1 bag (3 lbs) TJ’s Gold Potatoes
  • 1 package TJ’s Jalapeño Monterey Jack Cheese, diced
  • 1/2 package (5 slices) TJ’s Uncured Apple Smoked Bacon, cooked & chopped
  • 1 cup diced TJ’s Celery Hearts
  • 1/4 cup sliced TJ’s Green Onions (use white and green sections)
  • Dressing
  • 1/2 cup TJ’s Real Mayonnaise (or substitute 1/2 cup TJ’s Plain Greek Yogurt)
  • 1/2 cup TJ’s Sour Cream
  • 1 Tbsp TJ’s Aioli Garlic Mustard Sauce (add 1/2 Tbsp more if using Greek Yogurt)
  • 1/4 teaspoon TJ’s Sea Salt, or to taste
  • 1/4 teaspoon TJ’s Ground Black Pepper, or to taste

Directions

  1. Cook unpeeled, whole potatoes in a large pot of boiling water for about 20 minutes. Test potatoes periodically with a toothpick until you reach your desired tenderness. The toothpick should insert easily through the center and you should see some slight crumbling. Do not overcook! Place potatoes in a colander to drain then set potatoes aside to cool slightly.

  2. To make the dressing, combine mayo (or Greek yogurt), sour cream and garlic aioli in a small bowl and season with salt and pepper to taste.

  3. Quarter the potatoes, and place into a large bowl. Add cheese, bacon, celery and green onions to the bowl and gently toss the ingredients together adding 1 tablespoon of dressing at a time. Serve immediately.
