Steak Salad with Salsa Verde Vinaigrette

Ingredients

  • Cooking spray
  • 8 oz. sirloin steak
  • 1/2 tsp kosher salt, divided
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 2 tbsp. finely chopped parsley
  • 1 1/2 tbsp. white wine vinegar
  • 1 tbsp. capers, finely chopped
  • 1 tsp minced garlic
  • 1/4 tsp crushed red pepper
  • 5 cups arugula
  • 1/2 cup thinly sliced red onion
  • 1/4 cup shaved Parmesan

Directions

  1. Heat a skillet over medium-high. Coat pan with cooking spray. Sprinkle steak with 1/4 tsp salt and black pepper. Add steak to pan; cook 4-5 minutes on each side for medium-rare. Place steak on a cutting board; let stand 5 minutes. Cut across the grain into thin slices.

  2. Place remaining 1/4 tsp salt, oil, parsley, vinegar, capers, garlic and crushed red pepper in a bowl, stirring with a whisk. Divide arugula evenly among 4 plates. Top evenly with steak, onion, and cheese. Drizzle evenly with oil mixture.
