RUSS’S MUSTARD/VODKA PRIME RIB

Ingredients

  • 1 Standing beef rib roast (7 to 8 pounds)
  • 1/2 Cup vodka
  • 1/3 Cup prepared mustard
  • 2 Tablespoons chopped fresh thyme
  • 3 Large minced garlic cloves
  • 1/4 Cup extra virgin olive oil
  • Salt and fresh ground pepper

Directions

  1. Trim the meat & season with salt & pepper.

  2. Place meat on rack in a foil roasting pan.

  3. Rub with vodka.

  4. Let stand at room temperature for 1 hour.

  5. Roast at 450 degrees for 30 minutes.

  6. Combine mustard, thyme, garlic, olive oil.

  7. Coat the roast with the mustard mixture.

  8. Lower the grill heat to 325 degrees.

  9. Internal temperature 130 degrees for rare.

  10. Let stand before carving.
