Gnocchi Gratin

Ingredients

  • 1 22 oz pkg gnocchi
  • 1 tbsp butter
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fat-free milk
  • 1/2 cup fat-free, less-sodium chicken broth
  • 3/4 cup (3 oz) gruyere cheese, shredded
  • 1/3 cup fresh chives, chopped
  • 2 bacon slices, cooked and crumbled
  • Cooking spray
  • 1/4 cup (1 oz) Parmesan cheese, grated

Directions

  1. Preheat oven to 400 degrees.

  2. Cook gnocchi according to package direction, omitting salt and fat. Drain.

  3. Melt butter in a large saucepan over medium heat.

  4. Lightly spoon flour into a dry measuring cup, level with a knife.

  5. Add flour, salt, and pepper to pan.

  6. Cook 1 minute, stirring constantly.

  7. Gradually add milk and broth, stirring with a wisk until blended.

  8. Bring to a boil, cook until thick, stirring constantly.

  9. Remove from heat.

  10. Add Gruyere, chives, and bacon, stir until smooth.

  11. Add gnocchi and toss well.

  12. Spoon mixture into an 11 × 7-inch baking dish coated with cooking spray.

  13. Sprinkle with Parmesan.

  14. Bake at 400 degres for 20 minutes or until lightly browned. Serve immediately.
