Awesome Scones

Ingredients

  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup rolled oats
  • 1 stick butter, cut into pieces
  • 1 cup fruit of choice (dried cranberries, dried apricots, blueberries, or blackberries)
  • 1 cup buttermilk
  • Icing:
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. almond extract
  • 1/4 cup cream cheese, softened
  • 2 cups powdered sugar

Directions

  1. Spray cookie sheet with nonstick spray. Preheat oven to 425 degrees.

  2. Mix flour, baking powder and soda in a large bowl. Stir in oats. Using a pastry blender, cut in butter until coarse crumbs. Add fruit, then stir in buttermilk to make soft dough.

  3. Turn out onto lightly floured surface. Roll out and cut with a biscuit cutter, or buy hand, to make about 1 dozen. Bake for 15 minutes.

  4. Immediately top with icing when out of oven.

  6. Mix together the butter, vanilla, almond extract, cream cheese, and one cup at a time of the powdered sugar, until stiff spreading consistency using a whisk.
