Kesari Baath

Ingredients

  • 3/4 cup cream of wheat
  • 1 1/2 cup milk
  • 1/2 cup sugar
  • 1 Tbsp raisins
  • 1 Tbsp cashew
  • 1/8 teaspoon cardamom, ground
  • Pinch saffron
  • 2 Tbsp Ghee

Directions

  1. Heat ghee in pan, roast cashew and raisin until raisins puff and cashews warm. Remove raisins and cashews with slotted spoon and set aside.

  2. Add cream of wheat to same pan. Roast, stirring constantly, in ghee until fragrant. Approximately 5 minutes.

  3. While roasting cream of wheat, warm milk in saucepan. Do not boil.

  4. Add saffron and cardamom to cream of wheat, stir.

  5. Incorporate milk in 3 separate portions to cream of wheat. If you’d like a thinner consistency, add hot water.

  6. Add sugar. This will also thin the cream of wheat.

  7. Turn off heat, stir in raisins and cashews.
