Marinated Bocconcini

Ingredients

  • 3/4 lb. bite-size mozzarella cheese balls, drained
  • 3/4 cup olive oil
  • 1/2 cup roasted red peppers, finely diced
  • 1/3 cup fresh basil, finely chopped
  • 3 garlic cloves, chopped
  • 1/4 tsp red pepper flakes
  • 1 loaf crusty Italian bread, sliced

Directions

  1. Place cheese in a glass bowl; set aside. In a separate bowl, combine remaining ingredients except bread; pour over cheese. Cover and refrigerate for at least 4 hours before serving. May be kept refrigerated for one week. Serve cheese balls with toothpicks alongside slices of crusty bread.
