Freezer Southwestern Salsa

Ingredients

  • 10 cups tomatoes, chopped
  • 4 cups sweet corn
  • 4 cups canned black beans, drained
  • 2 green peppers, chopped
  • 1 chili pepper, chopped
  • 1 red onion, chopped
  • 3 garlic cloves, chopped
  • 2 tbsp. cider vinegar
  • 1 tsp taco seasoning mix
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground cumin
  • 2 tsp salt
  • 1/3 tsp pepper
  • 3 tbsp. cornstarch
  • 2-3 tbsp. cold water
  • 10 1-pint freezer containers or canning jars, sterilized

Directions

  1. In a large stockpot, combine all ingredients except cornstarch and water. Mix well; bring to a boil over medium heat. Mix cornstarch and enough water to make a pourable paste. Pour into tomato mixture, stirring constantly. Simmer until thickened. Ladle into freezer containers or jars, leaving 1/2-inch headspace. Freeze; keep frozen up to one year.
