Southwestern Smothered Potato Chips

Ingredients

  • 6 potatoes, sliced lengthwise 1/8-inch thick
  • 1/2 tsp salt
  • 2 tbsp. olive oil
  • 1/2 cup red onion, chopped
  • 1 cup shredded Monterey Jack cheese
  • 1 cup guacamole
  • 1 cup salsa

Directions

  1. Arrange potato slices in a single layer on a lightly greased baking sheet. Sprinkle with salt; drizzle with oil. Broil until low heat for about 10 minutes, until crisp but not burnt, checking often. Remove from oven. Sprinkle chips evenly with onion and cheese. Bake at 350 for 5 minutes, until cheese is melted. To serve, top with small dollops of guac and salsa.
