Bean and Pork Burritos

Ingredients

  • 1/2 cup canned vegetarian refried beans
  • 1/4 cup salsa
  • 4 oz. boneless pork loin, cut into thin, bite-size strips
  • 1/4 cup sliced green onions
  • 1/4 tsp. ground cumin
  • 1/8 tsp. garlic salt
  • 1/8 tsp. pepper
  • 4 8-9nch flour tortillas
  • 1 cup shredded lettuce
  • 1 small tomato, chopped
  • 1/2 cup shredded lower fat cheddar cheese (2 oz.)

Directions

  1. In dish combine refried beans and salsa.

  2. In colander toss together pork strips and green onion. Sprinkle with cumin, garlic, salt and pepper; toss to coat. Place colander in dish. Cover and microwave on high for 4 to 5 minutes or until pork is no longer pink, stirring pork mixture once.

  3. Wrap flour tortillas in in microwave-safe paper towels and add to microwave oven during last minute of cooking time.

  4. Stir bean mixture and spread on each tortilla. Spoon some of the pork mixture, lettuce, tomato and cheese on top. Fold in one side of each tortilla, then roll up from an adjacent side,
