(from castro15’s recipe box)

Categories: Pasta

Ingredients

  • 1/8 oz. Oregano
  • 5 oz. Lasagna Noodles
  • 2 Garlic Cloves
  • 2 oz. Spinach
  • 2 Italian Sausage Links
  • 8 fl. oz. Marinara Sauce
  • 2 oz. Shredded Mozzarella
  • 1/2 oz. Grated Parmesan Cheese

Directions

  1. Preheat the broiler. Bring a medium pot of lightly salted water to a boil. Thoroughly rinse produce and pat dry.

  2. Break noodles into 1" pieces. Mince garlic. Stem and mince oregano. Coarsely chop spinach. Remove sausage from casing.

  3. Place noodles in boiling water and cook until al dente, 8-10 minutes. Drain in a colander and set aside. While pasta boils, cook sausage.

  4. Place a medium oven-safe pan over medium heat. (You may also use a cast-iron skillet.) Add 1 tsp. olive oil and sausage in hot pan. Stir often, breaking up with a spoon, until no pink remains, 4-5 minutes. Transfer sausage to a plate. Reserve pan; no need to wipe clean.

  5. Return pan used to cook sausage to medium heat and add 1 tsp. olive oil. Add garlic, spinach, and half the oregano (reserve remaining for garnish) to hot pan and stir constantly, 30-60 seconds. Stir in marinara and remove from burner.

  6. Stir sausage and pasta into sauce. Sprinkle top with mozzarella. Place pan under broiler and broil until cheese is melted, 2-3 minutes. Carefully remove from oven. Plate dish as pictured on front of card, garnishing with Parmesan and remaining oregano. Bon appétit!
