Goat Cheese Mushrooms

Ingredients

  • 24 baby portobello mushrooms, stems removed
  • 1/2 cup crumbled goat cheese
  • 1/2 cup chopped drained roasted sweet red peppers
  • Pepper to taste
  • 4 tsp olive oil
  • Chopped fresh parsley

Directions

  1. Preheat oven to 375. Place the mushroom caps in a greased 15×10×1-inch baking pan. Fill each with 1 tsp cheese and top with 1 tsp chopped red pepper. Sprinkle with pepper; drizzle with oil.

  2. Bake for 15-18 minutes or until tender. Sprinkle with parsley.
