Ingredients

  • 2 boneless skinless chicken breasts
  • 2 T butter
  • 2 T olive oil
  • 1/2 onion
  • 5 garlic cloves
  • 2 cups chicken broth
  • 2 T sour cream

Directions

  1. Heat the butter in a medium frying pan. When melted, add the olive oil. When hot, add the onions. Crush garlic cloves and add. Cook until onions are transparent.

  2. Add chicken breast and brown both sides. Salt and pepper to taste.

  3. When chicken is brown, add the broth and simmer uncovered for 20 to 25 minutes, until done.

  4. Plate the chicken. The liquid in the pan will be reduced, but continue to cook it down until about half is left. Turn off the heat and add the sour cream. Stir until there are no lumps of sour cream.

  5. Pour the sauce over the plated chicken and serve.
