Bean Soup, Senate Style

Ingredients

  • 1 lb. dried beans (marrow, navy, pea or great northern)
  • 1/3 cup butter or margarine
  • 3 medium potatoes, cooked and mashed, or 1 cup prepared instant
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 tsp. (about) salt
  • 1/2 tsp. pepper
  • Chopped parsley

Directions

  1. Wash and drain beans. Put in large heavy kettle with 6 cups water. Bring to boil and boil 2 minutes. Remove from heat, cover and let stand 1 hour.

  2. Add 2 1/2 quarts water, bring to boil, cover and simmer 2 hours, or until beans are onion, garlic and 3 tsp. salt. Cover and simmer, stirring occasionally, about 1 hour.

  3. Add more water if necessary to make a thick soup, then add the pepper and more salt if necessary. Sprinkle with parsley. Serve with French bread.

  4. makes 4 1/2 quarts
