Greek Rice Salad

Ingredients

  • 1 1/2 cups plain yogurt
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 6 cups cooled cooked basmati rice
  • 3 cucumbers, sliced
  • 1/2 cup each chopped dill and mint
  • Salt and pepper

Directions

  1. Whisk yogurt with lemon juice and olive oil in a large bowl. Stir in rice, cucumbers, dill and mint; season with salt and pepper.
