Mexican Rice Salad

Ingredients

  • 1/2 cup mayo
  • 2 limes, juiced
  • 1 tsp ground cumin
  • 4 cups cooled cooked converted rice
  • 2 cups thawed frozen corn
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped scallions
  • 1/2 cup crumbled Cotija cheese
  • Salt
  • Chili powder
  • Lime wedges

Directions

  1. Whisk mayo with lime juice and cumin in a large bowl. Add rice, corn, cilantro, scallions and cheese; season with salt. Sprinkle with chili powder and serve with lime wedges.
