Cheddar-Beer Rice

Ingredients

  • 2 cups brown rice
  • 1 1/2 cups water
  • 1 1/2 cups beer
  • 3 tbsp butter
  • 1 tsp kosher salt
  • 1 1/2 cups shredded cheddar
  • 1 tsp Dijon
  • Chopped parsley

Directions

  1. Combine rice, water, beer, butter and salt in a saucepan. Bring to a boil, then reduce the heat to low and stir; cover and cook until tender, 45-50 minutes. Let sit, covered, 5 minutes, then stir in cheese and Dijon until the cheese melts. Top with parsley.
