Apple-walnut pancakes

Serves 4 people

Ingredients

  • 1 c whole wheat flour
  • 1 c white flour
  • 1 t. salt
  • 2 t baking powder
  • 1 T brown sugar
  • 2 c milk
  • 2 eggs, well beaten
  • 2 T oil
  • 1 c diced apples
  • 1/2 c chopped walnuts

Directions

  1. Combine in bowl: wheat flour, white flour, salt, baking powder and brown sugar

  2. Combine in separate bowl: milk, eggs, oil

  3. Add liquids to dry ingredients and stir until just mixed.

  4. Add: apples and walnuts

  5. Bake on moderately hot, lightly greased griddle

  6. Options: 1) use yogurt or juice in place of milk 2) Substitute another whole grain flour or cornmeal for 1/2 c. whole wheat flour 3) Use other fruit, drained and chopped, in place of apples
