Kale Salad with Grilled Cheese Croutons

Ingredients

  • 3 tbsp olive oil, plus more for brushing
  • 1 1/2 tbsp white wine vinegar
  • Pinch of sugar
  • 8 cups torn kale
  • 1 cup thinly sliced red onion
  • 2 slices white bread
  • Dijon
  • 2 slices Fontina

Directions

  1. In a large bowl, whisk 3 tbsp olive oil with vinegar and sugar. Massage with kale and onion; season. Make a sandwich with bread, mustard and cheese; brush with olive oil. In skillet, cook over medium heat until golden on both sides. Cut sandwich into quarters and sprinkle on salad.
