Apricot Cranberry Pecan Compote

Ingredients

  • 3 Tbsp. butter
  • 1 cup dried cranberries
  • 1 cup dried apricots, chopped
  • 1 cup chopped pecans
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 cup brown sugar, packed'
  • 1/4 cup apple cider vinegar
  • 1/4 cup brandy
  • 1/2 tsp. crushed red pepper
  • salt and pepper to taste

Directions

  1. Saute onion, cranberries, apricots, and garlic in butter until fragrant. Add water; allow to reduce by half.

  2. Add all remaining ingredients and reduce until thickened. Serve over a soft cheese of choice, such as a brie or triple cream.

  3. Any dried fruit is interchangeable.
