Bearnaise Sauce

Ingredients

  • 4 Tbsp. fat
  • Yolks of 4 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. tarragon vinegar
  • 1 tsp. onion juice
  • 1 tsp. chopped tarragon
  • 1 tsp. chopped parsley

Directions

  1. Stir the fat until perfectly soft and creamy.

  2. Place the egg yolks and the salt and pepper in the top of a double boiler and beat lightly with an egg beater, then add 1/3 of the fat and beat until smooth, add another third and beat again, and then add the remainder and beat until all is perfectly smooth. Add the vinegar and onion juice and beat again.

  3. Place over boiling water and cook for 3 minutes, beating constantly with the egg beater. Remove from heat, put in chopped parsley and terragon and use immediately.
