Bubbly Spinach Goat Cheese Dip

(from castro15’s recipe box)

Categories: Appetizers

Ingredients

  • 2 (4 oz) packages of plain goat cheese
  • 1 (5 oz) package of Boursin (I used the garlic and herb style)
  • 1 cup of shredded Parmesan cheese
  • 4 oz of cream cheese, softened
  • salt and pepper
  • 1 teaspoon garlic powder
  • 1 box of frozen spinach, defrosted and all excess water squeezed out
  • 10 green onions, chopped

Directions

  1. Preheat oven to 350 degrees.

  2. Lightly spray a 9×9 baking dish, pie plate or similar sized baking dish with cooking spray.  Set aside.

  3. Using an electric mixer, beat together your goat cheese, Boursin, Parmesan and cream cheese until smooth.  Beat in your salt and pepper (just a pinch) and garlic powder.  Next, stir in your spinach and green onions.  Spread this mixture into your prepared baking dish and bake about 20 minutes or until nice and bubbly.  Remove and serve warm with crackers, chips or pita bread.
