German Pancakes

We love this for a fast and easy supper recipe.

Serves 8 people

Ingredients

  • 6 large eggs
  • 1 C milk
  • 1 C flour
  • 1/2 t salt
  • 2 T butter, melted in bottom of baking dish
  • -Buttermilk Syrup-
  • 3/4 C buttermilk
  • 1 1/2 C sugar
  • 1/2 C butter
  • 2 T corn syrup
  • 1 t baking soda
  • 2 t vanilla
  • powdered sugar
  • fresh fruit

Directions

  1. Heat oven to 400 degrees. Place first 4 ingredients in blender, process just until smooth.

  2. Pour melted butter into baking dish. Add batter, bake, uncovered until puffed and golden brown.

  3. Meanwhile, place butter, sugar, buttermilk, corn syrup and baking soda (when you add the baking soda, it will foam quite a bit. Fun for kids to see) into small sauce pan, bring to boil. Cook, uncovered 7 minutes. Remove from heat; stir in vanilla.

  4. Remove pancake from oven. Dust with powdered sugar; serve immediately with syrup and , if desired fresh blueberries or other fruit. I make a simple syrup with about a cup of blueberries and 1/4 cup sugar. cook until blueberries are soft. Skim off floating berries.

  5. No buttermilk? Substitute 3/4 C milk plus 1T vinegar. Let stank for 5 min., then use as buttermilk
