Buttermilk Pancakes

Serves 6 people

  • 2 eggs, beaten
  • 1 Cup buttermilk (1C milk + 1 T vinegar)
  • 1/2 C sweet milk
  • 1/4 C salad oil
  • 3 T sugar
  • 1 1/2 C flour
  • 1/2 t salt
  • 1/2 soda
  • 1 1/2 t baking powder


  1. Mix together all the ingredients until smooth. Fry by spoonsful on a slightly greased fairly hot griddle. Turn as soon as the bubbles start to break around the edge of the cakes. If you cook them too much on the first side, they will be tough and heavy. Serve immediately.
