Boston Clam Chowder

Serves 6 people

Ingredients

  • 3/4 lb. minced or 2 cans 6 1/2 oz.
  • 1 C chopped onion
  • 1 C celery chopped
  • 2 C diced potatoes
  • 1/2 c butter
  • 1 qt. half and half
  • 1 1/2 t salt
  • 1/2 t sugar

Directions

  1. Put vegetables in cooking container. Cover with water. add salt and pepper. Use a minimum amount of water. cook until vegetables are just tender. Add clam juice from drained clams, butter, half and half. Heat through, add clams. do not boil. To thicken mix some flour with milk or water until smooth. Add to soup and cook until thickened.
