Pumpkin Chiffon Pie

Wonderful non baked pie. A Thanksgiving tradition

Serves 8 people

Ingredients

  • 1/4 C cold water
  • 1 envelope Knox gelatin
  • 3 eggs separated
  • 1 C sugar
  • 11/4 can pumpkin
  • 1/2 t each cinnamon, nutmeg, ginger or 11/2 t pumpkin pie spice
  • 1/2 t salt
  • 1/2 C milk

Directions

  1. Soften gelatin in water.

  2. Beat egg yolks slightly. Add sugar, spices, milk, to pumpkin. Cook until thickened. Add gelatin, stirring well. Cool! Beat egg whites until peaks form but not dry. Fold into pumpkin mixture. now days II add the whites to warm pumpkin mixture to partially cook egg whites. Can make slightly grainy but still tastes good. Pour into baked shell or graham cracker crust. Cool several hours until set.
