Lemon Meringue Pie

Serves 8 people

Ingredients

  • 6 T flour
  • 1 1/2 C water
  • 1 T lemon rind
  • 1 1/2 C sugar
  • 3 eggs separated
  • 1/2 C lemon juice
  • dash salt
  • 9 inch baked pie shell
  • Meringue:
  • 3 egg whites
  • 6 T sugar

Directions

  1. Combine flour, sugar, and salt . Add water and egg yolks slightly beaten, mixing thoroughly. cook 10 minutes, stirring constantly or until thickened. Remove from heat. Add lemon juice and rind. Cool. Pour into pie shell. Beat egg whites until foamy throughout. Add sugar 2 T at a time, beating after each addition until sugar is blended. When all sugar is added, continue beating until mixture stands in peaks.. Pile lightly on filling, making sure meringue comes to edges of shell. Bake at 350 degrees 15 minutes
