Cereal Crunchies

Ingredients

  • 1 C sifted flour
  • 1/2 t soda
  • 1/4 t baking powder
  • 1/4 t salt
  • 1/2 C sugar
  • 1/2 C firmly packed brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 C quick cooking rolled oats
  • 1 C rice crispy cereal
  • 1/2 C coconut

Directions

  1. Oven 350 degrees.

  2. Sift flour with soda, baking powder and salt. Cream butter in mixing bowl. Gradually add sugars, continue creaming until light and fluffy. Add egg and vanilla, mix thoroughly. Blend in remaining ingredients. Shape dough into balls, using a rounded teaspoonful for each. Place on greased cookie sheets; flatten slightly. Bake at 250 degrees for 8 to 10 minutes, until golden.
